I love Shrimp!

I use Salsa in a Snap to get the ‘Zing’!  Add or subtract recipe ingredients depending on how many people you are cooking for…..bon appétit!

Ingredients: [1-2 Servings]

  • 1-2 Tbsp Olive oil
  • 2-3 Cloves of minced Garlic
  • ½ Yellow pepper
  • ¼ Onion
  • 6-8 stalks of Asparagus
  • 6-8 Shrimp [deveined]
  • ½ c of Salsa [recipe below]
  • ¼ c of Ricotta Cheese
  • ¼ c of Almond milk [or regular milk]
  • 2-stalks of Kale leaves [chopped]
  • ½ -Roasted Red pepper
  • Garlic Salt, Black Pepper & Basil [season to taste]

 Directions:

  • Sauté Olive oil and Minced garlic in pan
  • Slice on the diagonal the Yellow Pepper, Onion and Asparagus then add to pan
  • Season with seasonings and sauté 5 minutes
  • Add shrimp and sauté another 5 minutes
  • Add the salsa, ricotta cheese and almond milk-stir
  • Add the roasted red pepper and chopped kale leaves – marinade 5 minutes
  • Serve  over your favorite pasta with fresh bread & salad ~ YUM

Salsa in a Snap:

  • 1-14.5 Oz of Diced tomatoes
  • 1-Scoop of Salsa in a Snap
  • Stir and refrigerate for 1 hour before using
