I love shrimp! I love shrimp in sauce 😉

So…I came up with this pretty simple but tasty recipe with an Italian flair. Between prep and cooking time, you can have a zesty dish to serve up in no time.

I discovered a short cut in giving this the “zing” it needs. I use Salsa in a Snap! This great tasting spice mixture is so simple to use. Mix it with a can of petite diced tomatoes, cream cheese, or sour cream for some variations. Check out their website for more recipes.

When I cook, I never really follow a set ingredient amount unless I am trying something new out of a book….so the recipe below is approximate amounts of what I used. You can add or subtract depending on how many people you are cooking for 😉 Basically with this recipe you want the creamy effect…so you might need to add more almond milk or ricotta cheese.

You can use regular milk…I just made the switch awhile back from regular to almond milk.  I hope you enjoy it as much as I did….Try it and leave me a comment below with your results.

Ingredients for 1-2 Servings


  • 1-2 TLBSP Olive oil
  • 2-3 Cloves of minced garlic
  • ½ Yellow pepper slices
  • ¼ Onion slices
  • 6-8 stalks of asparagus slices
  • 6-8 de-veined shrimp
  • ½ c of salsa mix (see recipe below)
  • ¼ c of ricotta cheese
  • ¼ c of almond milk
  • 2-stalks of kale leaves
  • ½ -Roasted red pepper
  • Season to taste-Garlic Salt, Black Pepper & Basil

 Directions ~

Sauté Olive oil and Minced garlic – Dice on the diagonal the Yellow Pepper, Onion slices and Asparagus and add – Season with seasonings and sauté 5 minutes -Add shrimp and sauté another 5 minutes-Add the salsa, ricotta cheese and almond milk-stir-Slice the roasted red pepper and chop kale leaves and add additional seasonings if needed and place on low for another 5 minutes to marinade the dish. Serve with fresh bread & salad ~ YUM

Salsa Recipe

  • 1-14.5 Oz of Diced tomatoes
  • 1-Scoop of Salsa in a snap
  • (Stir and refrigerate for 1 hour before using)
