I love Shrimp!
I use Salsa in a Snap to get the ‘Zing’! Add or subtract recipe ingredients depending on how many people you are cooking for…..bon appétit!
Ingredients: [1-2 Servings]
- 1-2 Tbsp Olive oil
- 2-3 Cloves of minced Garlic
- ½ Yellow pepper
- ¼ Onion
- 6-8 stalks of Asparagus
- 6-8 Shrimp [deveined]
- ½ c of Salsa [recipe below]
- ¼ c of Ricotta Cheese
- ¼ c of Almond milk [or regular milk]
- 2-stalks of Kale leaves [chopped]
- ½ -Roasted Red pepper
- Garlic Salt, Black Pepper & Basil [season to taste]
Directions:
- Sauté Olive oil and Minced garlic in pan
- Slice on the diagonal the Yellow Pepper, Onion and Asparagus then add to pan
- Season with seasonings and sauté 5 minutes
- Add shrimp and sauté another 5 minutes
- Add the salsa, ricotta cheese and almond milk-stir
- Add the roasted red pepper and chopped kale leaves – marinade 5 minutes
- Serve over your favorite pasta with fresh bread & salad ~ YUM
- 1-14.5 Oz of Diced tomatoes
- 1-Scoop of Salsa in a Snap
- Stir and refrigerate for 1 hour before using
