White Chicken Chili
Sauté the following ingredients in stockpot for five minutes. [dice veggies]
- 1 Tbsp. of olive oil
- 1 Jalapeno pepper
- ½ Red pepper
- 4-5 sliced mushrooms
- 3 minced garlic cloves
- 1 Onion
- 1 Stalk Celery
Next, add the below spices and sauté for another minute.
- 1 Tbsp. ground Cumin
- 1 Tsp. Chili Powder
- Ground Black Pepper & Salt
Stir in the following ingredients and bring to simmer.
- 4 Cups of Chicken Broth
- 1 Juice of Fresh Lime
- 1 Tsp. Worcestershire Sauce
Add white beans and simmer additional 15 minutes.
- 2 [15 Oz.] Cans of White Beans-Drained and Rinsed
Add chicken and cilantro, then simmer another 10 minutes.
- Shredded rotisserie chicken (Remove Skin)
- ¼ Cup of Fresh Chopped Cilantro Leaves
Serve Up! Garnish with Lime wedges/Tortilla Chips and/or add a dollop of Sour Cream/Chili Hot Sauce
